Aperol Spritz was born in 1919 in Padua, Italy. The Barbieri brothers introduced Aperol — a light, bittersweet apéritif that quickly became the base for a refreshing cocktail. In the 1950s, mixing Aperol with prosecco and soda turned it into a timeless Italian classic.
Classic version:
3 parts prosecco
2 parts Aperol
1 part soda
Ice and an orange slice
Modern twists include grapefruit juice, strawberries, sparkling wine or herbs like basil and rosemary.
It’s light, refreshing, photogenic and has that perfect bittersweet balance — a go-to drink for summer evenings and rooftop parties. It reflects the Italian lifestyle and charm.
Exciting news! The Mercato & Aperol rooftop terrace is now open on the 5th floor of Gulliver in Kyiv.
